Wahoo / Ono

Scientific Name: Acanthocybium solandri

Wahoo is available year-round fresh or frozen in whole, fillets, steaks, and H&G forms. Although wahoo is a member of the mackerel family, its flesh is white, mild and has a taste comparable of albacore.  The shelf life of fresh ono is relatively short.  For freshness, raw wahoo meat should be pinkish orange with clean gills, and the eyes should be bright and clear.

From H&G (average 30# fish with blood line removed):

  • To Skin-On Fillet: 78%
  • To Skin-Off Fillet: 65%

For example, a 150# box with 10 x 15# fish should yield:

117# of skin-on fillet or 97.5# of skin-off fillet
